Balsamic Berry & Ricotta Toast

  • Serves 4

    • 250g punnet strawberries, sliced into rounds

    • 1 tablespoon brown sugar

    • 2 tablespoon balsamic vinegar

    • 1 lemon zested

    • 1 cup smooth ricotta

    • 1 teaspoon honey

    • Pinch of salt

    • 4 slices sourdough toasted

    • 1 tablespoon extra-virgin olive oil

    • ¼ bunch basil leaves picked

    • Cracked black pepper

    1. Macerate the strawberries
      In a medium bowl, toss strawberries with sugar, balsamic and lemon zest. Set aside for 10 minutes, the berries will glisten and release a gorgeous syrup.

    2. Whip the ricotta
