Pineapple, lime & coconut chia puddings
Bright, creamy, and full of tropical energy, these Pineapple, Lime & Coconut Chia Puddings are a nourishing way to start the day. It’s refreshing, lightly sweet, and full of sunshine-on-a-spoon goodness.

Serves 4
½ cup chia seeds
¾ cup coconut yoghurt, plus ¼ cup extra
¾ cup milk
2 tablespoons honey
1 lime, zest & juice
¼ pineapple, diced
½ cup coconut flakes

Mix the chia base
In a medium bowl or jug, whisk together the chia seeds, ¾ cup coconut yoghurt, milk, honey, and lime zest.
Pour roughly ½ cup of the mixture into four cups or containers.
Cover and chill for at least 2 hours or overnight until thick and creamy.Make the lime-honey syrup
In a small bowl, whisk the lime juice and remaining honey until smooth. Set aside.
Cook the pineapple
Heat a dry frypan over medium heat. Add the diced pineapple and cook until it softens and picks up a little colour. Pour over the lime-honey syrup and simmer for 1–2 minutes until glossy. Remove from heat and allow to cool completely.
Toast the coconut
In the same dry pan, toast the coconut flakes until golden and fragrant. Transfer to a plate to cool.
Assemble
Top each chia pudding with a spoonful of the extra coconut yoghurt. Spoon over the pineapple and its syrup, then finish with toasted coconut flakes.
