Spiced chicken tacos with blood orange salsa
These tacos bring together smoky spiced chicken, jewel-like blood orange salsa, creamy avocado, and a dollop of yoghurt, all wrapped in soft tortillas. Colourful, fresh, and flavour-packed, they’re a joyful balance of protein, fibre, smart carbs, and good fats.

4 large chicken thighs
1 tablespoon smokey paprika
1 tablespoon ground cumin
2 tablespoons extra virgin olive oil
Pinch salt
2 blood oranges, zested, skin removed and diced
1 bunch radish, diced
1 Lebanese cucumber, seeds removed and diced
1 red chilli, seeds removed and finely diced
½ bunch coriander, leaved picked and stems finely chopped
2 avocados
½ lemon, juiced
½ cup Greek yoghurt
8 wholegrain mini tortillas

Stir spices, olive oil, and a pinch of salt into a paste. Rub all over the chicken and let it soak up the flavour, at least 15 minutes, or overnight if you’re extra organised.Sizzle the chicken
